Muffins 'Yogi Poppy Lemon Lime'

Gluten free Fluffy Poppy top Yoghurt Muffins

Fluffy and light, sweet poppy speckled citrus lime tang Muffins. Free of Wheat, Gluten and Sugar Cane, as Always of course, yet still tastes amazing. Here’s the cake version with carnitine (Link) From Chapter 06 Sweetgrain Starchfit (Link)

Yoghurt ‘Greek’ (Link)
Beetroot Sugar
Rice Flour
Oat Flour
Baking Powder
Purée 'Apple Pink Lady' (Link)
Rice Bran Oil
Eggs
Lemon
Limes
✧☾ Method☽✧
Halve zest up and juice lemon and limes. Combine dry bowl - Oat flour, Brown Rice flour, Baking powder and Beetroot Sugar. Crack a couple of eggs in a bowl add juice/pulp, purée and whisk. Add Yoghurt to combine, whisk, add zest, whisk... Mix the wet into the dry and pour into muffin tins lined with baking paper. Top with Poppy seeds. Bake for 30 minutes. Allow to cool
